My First Belgian Snow(ish)!

When I finally decided to brave the cold and leave my warm bed this morning (really who wants to touch the icey tile floor?!), I did the usual weather check out the window to see if it was raining.  I was greeted with a little surprise!  It wasn't raining... it was snowing!  

Let me explain my definition of snowing.  As a Louisiana girl, if the stuff falling from the sky is white, then it is snow.  Others might explain todays weather as extremely cold with a few snow flurries, but that is not as fun in my opinion.  The snow even remained frozen when it hit the ground, leaving little specks of white glitter sprinkled down the street.  

Two cups of coffee did not provide me with the motivation and focus I needed to do the mundane work that I have accepted as my only form of a job.  So I bundled up and braved the cold to experience a little of this new weather.

Unfortunately the "snow" did not last where there was much foot traffic so there wasn't much to see, but I still enjoyed it!  

Dustin brought me up to Shape to run a few errand.  I sold a dress to one lady and we picked up a jail-broken iphone we purchased from another ladies on Shape for super cheap!  So hopefully once we get it set up I can keep in touch with everyone more affordably!  

In keeping with our "clean eating week" and the bitter cold outside, I made Pumpkin-Shrimp Curry served over a Brown Rice and Carrot Pilaf!

My First Belgian Body Pump!

So only about a month after being here and about 2 months since I have been at the gym, I finally got my lazy but to my first Belgian Body Pump class!

About a week ago we found a gym that actually has the Les Milles classes, so Dustin talked to one of the employees and got a free week pass.  Although I usually prefer working out by myself (its my me time!) I was determined to coax Dustin into going with me so I'd have another English-speaking person in the class!  He's come to a class with me before and was not a fan, but he was a great sport tonight!

I really enjoyed the class!   It felt great to work out again and I always loved taking the class back at home. The instructor was great, so full of energy and really welcoming.  She even jammed out to "Eye of the Tiger," perfectly reciting every line!  But I could definitely tell it had been awhile since I had hit the gym.  About halfway through I felt like I was in a French boot camp!

So an hour later my legs were shakey and my arms were tight, but all I could do was smile and think... I SURVIVED!  Now I am determined to keep up with some sort of exercise regimen!

To add to a healthy lifestyle, I started a two week clean eating program.  Our first dinner: grilled salmon, lentils, and beet soup... Yummy!

My First Belgian Concert!

Last night Dustin and I went to our first Belgian concert together... Dropkick Murphys!

The concert was near Brussels (about 45 minutes away from our apartment) so I cooked an early dinner for us and then we headed off to the concert.  It was quite a scene!  A huge mix of people and ages in the crowd.  My favorite were the older Scottish men in their kilts.  Like really what is cuter than an old guy with a Scottish accent, in a kilt, drinking a big beer, jamming out to an Irish punk rock band?!

After Dustin purchased his souvenir (another damn t-shirt-haha) he got his beer and I got my wine.  Definitely not a New Orleans concert as you had one choice of beer, Jupiler (the European Budweiser!) and either red or white wine.  Since the wine glasses were so small, I got two and dumped them in a larger plastic cup.  I'll always be a Southern girl... definitely made my momma proud!

The opening acts were pretty good and we opted for some front row seats instead of crowding on the floor.  Although I do love a crazy rock concert, it was much more entertaining to watch the mosh pits from an elevated surface than dodge them on the floor!

The band was awesome!  If you haven't listened to them before you have to look them up... think a mix of punk rock and old Irish pub music!  They had so much energy and filled the stage with a bunch of their fans by the end of the concert.

I can't wait to go see more shows at the venue, it was pretty small and you could tell no seat was a bad seat!  So since Dustin picked this one, the next concert is my choice (Melissa Etheridge is going to be there in February... hint, hint)

Anyways I'm off to get my costume together for the 80's party tonight!  That shouldn't be too hard with the fashion around here!

My First Belgian Chinese New Year!

I was trying to do work this morning but was distracted by the banging noise that kept getting closer and closer.  I finally decided to get up and look out the window to see where the noise was coming from.

Down the street there was a Chinese dragon and surrounded by a group of people.

There is a store across the street owned by two Chinese women.  The lady was setting up a long string of fire crackers and a group of vegetables.  I quickly googled the date to find out it was the Chinese New Year (Oops... I missed that!) and the year of the dragon!

A few minutes later, the group had made their way down to the store across the street from our apartment.   There were two dragons and a Buddha (complete with a round belly!)  One man was playing the drum and another banging the cymbals.

The little boy was handing out candy and oranges to everyone around.  He was so excited when his grandma brought him into the middle of the dragons to dance around.

I had the best seat in the house (and the warmest).  It was unlike anything I had seen before.

Well by the time they finished the block, they had performed this whole routine 2 additional times.  Let's just say the banging of the cymbals and the drums and the abundance of fire crackers got a little old.

There are still pieces of red confetti from the fire crackers all over the front of the store, which I found really strange.  Most store fronts around here are kept extremely clean.  Well after reading up on the first day of the Chines New Year, I found out that it is considered unlucky to clean on the New Year.  Damn!  Guess I shouldn't have cleaned the apartment today!

But it did put me in the Chinese New Year spirit... I only wish I had the groceries to make some kind of Chinese dish for dinner!  Anyways 新年快乐 (Happy New Year)!

Our First Troc Visit... and Purchase!

Dustin and I had planned all week to spend Saturday shopping at the Trocs.  They are the local consignment stores and we had heard nothing but positive reviews.  There was one in Charleroi, about 45 minutes from Mons, right outside of Brussels.  We also planned to hit two others that were on the way.

We were not disappointed.  It is amazing what people here will sell in order to go purchase some new, cheap Ikea furniture.  Some of the pieces were down right amazing, but just too big and bulky for our apartment (that is if we would even be able to get them into our apartment!)

We decided on a glass front cabinet.  I am going to paint it white since the finish doesn't go with our apartment, but the details in the piece are beautiful.  One of Dustin's coworkers graciously offered to help us transport the piece in his SUV, so hopefully we have it sometime this week.

We also made a pit stop at Zara and I got a amazing teal coat for just 59 Euros.  I am not sure if I was more excited about the coat or furniture!

After a long day of shopping we went to Jon and Amy's house for lasagna and wine to celebrate Jon's birthday.  We then went out in downtown Mons for a few drinks.  The local music never seems to disappoint (note the sarcasm!)  I really miss the music in New Orleans!  But despite the, um... different, atmosphere, it was a great night.  They are always a blast to hang out with.

Our First Big Apartment Purchase!

I spent the day waiting for DHL to deliver a package.  I wanted to go to the Friday market, but didn't want to miss the delivery guy again.  After calling the company they gave me a time frame which the package would be delivered, um 9am to 6pm?!  That's even worse than the cable guy! lol  The cold, rainy weather made waiting inside a little easier.

A cold rainy day is the perfect setting for baking so I made some really good banana oat cookies.  They were a weight watchers recipe so I didn't feel too bad about the numerous scoops of batter I consumed!

Come to find out the package was our shower curtain and mat, which I was quite excited about!  One room checked off as done (I know it's an easy room, but that makes me feel more accomplished!)  So here is our bathroom:


When Dustin came home we drove to Brussels to go to Habitat and order our sofa.  It took quite some time and of course they do not carry the sofa we want so we have to wait 6-8 weeks.  But I absolutely love it and it is totally worth the wait!  Here it is:

We are going to the "flea markets" tomorrow so hopefully I will have some great finds to share with you!

My First Day as an Official College Graduate & My First Belgian Movie Theater Date!

I spent the morning doing some work and baking some pretty yummy inside out carrot cake cookies!  They were quite delish and are going to work with Dustin tomorrow because my love for carrot cake is not easy to ignore!  You can get the recipe here... I made my own icing but the cookies themselves were really good and easy.

Dustin and I then met with our land lord at Brico Plan-It (the European Home Depot) to which we found out that he wants us to use shower curtain rods to hang up curtains in our living room... um no?!  After a little convincing (he is a little bit of a push over) I think we got him to agree to let us hang actual curtain rods and real curtains... fingers crossed!

And today I am officially a college graduate!  My mom received my diploma in the mail today!  Can't wait to see it in person... so exciting!!!

Chris then came over for dinner before we drove to the movie theatre, Kinepolis Imagibraine.  Luckily for us it is in Flemish country so they show movies in English, although they have both French and Dutch subtitles.  I always find those distracting! haha  The selection of snacks were awesome.... a full candy bar, nachos, popcorn, ice cream, and beer.  I was excited not to have sneak my little bottle of wine into the theatre!  The seats are so comfortable and HUGE complete with nice big armrests... yes I am one of those people who doesn't share well when it comes to the armrest!  We saw The Girl with the Dragon Tattoo.  It was good but very intense.  

So the final conclusion is that we will have many more movie dates!  But only after we finish the whole furniture shopping date thing!

My First Step In Organization... The Belgian Way!

I decided to step up our first Ikea purchase today and organize our laundry room/pantry.  I was missing some pieces since Ikea was out of them, but I'd say it was a pretty successful start!

This is our only form of storage so I am determined to make it EXTREMELY functional!  Stupid Europeans do not appreciate the importance of storage and organization! haha

And after 30 minutes of scrubbing the scum behind the cabinet, we had a clean and empty room!

Oh and some more drawers for the bottom shelves!

So still no complete projects in the apartment... but I'm getting there! haha

My First Realization of How Much I Have Always Taken For Granted!

Yes, today the American spoiled brat of me totally realized how much I have taken for granted.  Really, how nice is it to be able to have someone to talk to during the day.  Sitting in this white empty box we call an apartment, has led me to the point that I would give anything just to have some interaction during the day.  Even when I go "exploring" through the city, I do not even understand the people I am around.

I was so excited today to actually understand someone's French.  Granted it was a little kid being picked up from day care, repeating "Du Chat... meow, meow, meow!  Du Chien... woof, woof, woof!"  How sad is that?  The rest of my walk I felt like I was in a bubble, surrounded by strangers and I could not enter their world.

I also realized how nice it is to have a car and be able to do the things you want to do, when you would like to do them.  I usually try not to do too much during the day, because I don't want to spend any money since I am not making any to put back in-lol.  Even though we have small grocery store downstairs, they carry very limited items.  You can't even purchase chicken or vegetable broth there.  I can't go onto the base without Dustin and the next regular size grocery store is about a two and half hour walk from the apartment (and yes, dad's stories about walking to school uphill the whole way are true, because that is exactly how this walk is... seriously!)

And closets!  Well damn, how many times did I complain about my small closet in our old house?!  At least I had a closet!  We have two small wardrobes at the moment and have taken at least three trips to find decent wardrobes to unpack our clothes into, but of course Dustin doesn't want to spend the money on them... Men!   My first paycheck is being dedicated to nice wardrobes!!!

I know that I am not contributing really anything to the monetary income of our household, which quite frankly sucks!  I have about 40 euros left in my wallet from when I got here, and I cannot pull money out of my bank account here.  So these 40 euros have to last me until I get back to the States and pull out money, because I am not loosing my pride to ask for some cash to go to the store (that is one promise I made to myself and set in our relationship before I moved here!  I am not Dustin's child! lol).  But after reading this article today....  totally different way of looking at my life right now!  Kind of made me feel better even though I will never settle for being a homemaker! haha

Don't get me wrong, I am thankful for what I have now and at least I have a nice roof over my head and food in my belly!  But the convenience and freedom that I use to have no longer exists and right now I would give everything up in a heartbeat, just to have that freedom!  Not being a house girlfriend, being able to go the gym, being able to actually shop for (and purchase) furniture, having a purpose when I wake up, being able to communicate with multiple people during the day, going to the gym, etc, etc, etc....

My First (Semi) Successful Ikea Trip!

So I had grand plans to search for furniture and clean the apartment this morning, but of course a few girl problems came in the way and I spent the morning in bed!  Once Dustin was off of work we decided to drive to Ikea to make the purchases we wanted to make yesterday, and YES, we actually made a semi successful achete (yes, that's french for purchase!)

Of course Ikea was missing a few of the pieces we needed, but we were in and out of there in less than three hours and had purchased almost all of the things we needed to organize our laundry room/pantry as well as some wine glasses and other kitchen accessories.  I was worried that we weren't going to be able to fit everything in the car, but the little trunk holds more than I thought.

SCORE-it feels great to actually have something large that we purchased for the apartment.  Although I might feel differently when I try to put everything together tomorrow!

My First Day in Gent!

The past week has been a bit crazy!  Had a little technical trouble and "whole lotta" trouble settling in.  The homesickness had definitely set in, but I hit the refresh button today!


Dustin and I planned to go to mass today but after staying up to watch the Saints game until 3am, I was not in the mood to get out of bed.  But for some reason I felt a great urge to attend; so after hitting the snooze button about 5 times and scrambling to shower and get ready, we were on our way to SHAPE.  


There is a new pastor from Nigeria who is absolutely wonderful.  He reminds me of Father Kyle back at home, and I was delighted to feel an instant connection and comfort throughout mass.  Of course, it was one of those masses that all the readings and the homily are directed to exactly what you are feeling, and Father ended his homily with the well known saying, "Let Go and Let God."  Um duh... that's why I had the urge to go to mass today.  


So I left the church, ready to refresh my view and appreciate the path God has planned for me... even if it is not exactly what I had envisioned!


Dustin and I continued our second Sunday ritual of attending the market, and we got some great cheese and vegetables that I cannot wait to cook with this week.  We also purchased some dried kiwi, bananas, and nuts that were delicious!


Our plan then was to go to Ikea in Brussels to finally purchase the shelving system to organize our pantry/laundry room.  So we drove up to Ikea, about an hour away, only to find that the store was closed.  Since we had been to the Ikea in Gent on a Sunday before, we knew they would be open, so we decided to drive about 30 minutes farther to purchase our goods.  Of course we get there and the place is like an old abandoned town from a western movie.



"Let Go and Let God" right?!  So we punched in the Gent city center in the GPS and drove a little farther to explore the city.  We have been to Bruge, which I thought was the most romantic and amazing city in Belgium, but I must say Gent stole my heart!  It is in the Flemish region of Belgium, which already makes it wonderful, because, yes, I have fallen in love with the Flemish people.

We walked through the city center, and just took in the details in the architecture, the bridges, and just all the beauty of the city.  Dustin and I decided to find a pub to stop in for a drink and snack.

We attempted to go to Cafe Galgenhuis, but this tiny pub was packed, so after walking around for a while, we decided on Het Spijker.  Located in an extremely old building and everything seems so authentic, complete with simple candle lighting.

I had a glass of hot wine (of course!) and Dustin had a Flemish coffee.  We ordered a plate of cheese, salami, and pickles to munch on and Dustin even went to get me some escargot from the street vendor right outside.  It was a great way to warm up from the cold and I came so close to experiencing my first pub fight! haha

We ended up walking around for a while longer and even had another glass of hot wine cuddled under the space heaters and wrapped in blankets at another restaurant.  Then it was back to Mons to finish washing Dustin's uniforms and all the other necessary duties to prepare for the upcoming week.


My night was complete with a fabulous Skype session with Jennifer, Nikki, Sammy, and all the girls!  It is so great to actually see them, and I wish I could jump through the computer screen and just sit in the kitchen with them.  I truly am so blessed for such an amazing family.


Although I was frustrated to go another weekend without purchasing a piece of furniture, I am so grateful that God stepped in and reminded me of how blessed and lucky I am and all the world I have to see and experience.  So I begin this week with a dedication to make this move successful and to fill my days with meaning and purpose.  "Let Go and Let God," that is the quote of the week!

My First Mons Market Sunday!

Dustin and I woke up early to attend Mass on SHAPE this morning.  We then got to pick up our first visitor, Heidi!  Jon and Amy had asked us to dog sit for them while they went to Germany for some doctors visits tomorrow morning.  I was so excited to finally have a little furry friend to keep me company! She is a little older and so sweet, but definitely not as awesome as my Sammy!


After picking up Heidi, Sherry had asked if we wanted to go to the Mons markets with her.  They are held every Sunday and I know they will become a Sunday ritual.  There is a flower market by the train station that we first met Sherry and her daughter, Katy.  The flowers were beautiful, and I cannot wait to purchase some plants for our little porch area.

Sherry then drove us to the food market.  It is full of different vendors with amazing fresh vegetables and fruits, yummy (stinky) cheese, as well as fresh breads and pastries.  We stopped at one vendor who had rotisserie meats, potatoes, and mushrooms.  Everything was amazing and Dustin got a rack of ribs which he had later for dinner (Easy cooking for me tonight-yay!).  We also got a few veggies for the week and some wonderful cheese.  There were a few antique stores that we walked into.  My mom would go crazy if she saw some of the pieces!

Later, Dustin and I took Heidi for a long walk around downtown Mons and then went to the grocery store on base.  Let's just say Sunday night is not the best time to go shopping here.  There was absolutely nothing left.  Not a bag of salad, very few veggies, no black beans, chicken and many other regular items.  I felt like I was being rationed, and after going through the whole check in process of just getting on the base and dealing with everything, I really didn't even want to be there.  It is so awkward, just feel as if I don't belong and it is another slap in the face that the days are counting down and I have to find a way to stay here legally.

All the stress meant that we stopped to pick up a bake at home pizza, salad, and bottle of wine for dinner (of course Dustin had his ribs too).  So it's an all American night, complete with football!!!

My First Experience of Ikea Hell!

So today was the designated Ikea day, which turned into my first day of Ikea Hell!

We had planned to purchase most of our big furniture from Ikea today.  Well of course after we drive an hour to get to the store, they do not have everything in the same finish so our plans were a total failure.  We spent almost four hours in the store trying to figure out new combinations but of course we left with some wine glasses, bath towels, and a step stool.  I was just glad to get out of there!  Haha

We then headed to Frank and Sherrie's house.  They have three little girls that are absolutely adorable and so sweet!  Frank is Scottish (love his accent) and is being deployed on Thursday so they invited us over for beer, wine, and cheese.  There home is beautiful and so welcoming.  I had a wonderful time and wish Frank would be here longer.

As much as I enjoyed myself all the questions and discussions just reminded me that we have about 83 days to figure out how I am to stay here legally for a little while.  I am so overwhelmed looking at the consequences that come with quitting my job and purchasing a one way plane ticket to Belgium.  As much as I love it here, it is so difficult to deal with all of the stuff that comes as a result.

My First Venture in Mons... To the Church of Saint Waltrude!

Today was the first day I ventured out in Mons by myself!

The weather was beautiful so instead of unpacking boxes, I decided to venture out of the apartment to see what I could find!  My first sight was a man peeing in a little potty they have for the men!  It's so weird, just a little walk in so they can turn their backs and relieve themselves.  Quite sexist I must say!

I didn't go much farther before I found a great little park!  I think this will be Sammy and I's daily place to chill!  It is right next to the big church that is at the top of the hill of Mons, the Church of St Waudru.  It is absolutely stunning and one of those places to go to get you out of the slump and remind yourself why you are so lucky to be here!

Come to find out the Church was founded by Saint Waltrude (duh!) who is actually the patron saint of Mons.  Well it's actually Saint Waldru in French!  After raising her four children, her husband went to the abbey and she became a nun.  She founded the Church of St Waltrude as a convent upon which the entire city of Mons grew around.  The shrine of the saint is kept in the church, only taken out during Ducasse de Mons festival, when it is carried through the city on a gilded cart.  So amazing all the history present here!

I decided to explore a little more and met a few new people.  One group of people had a gentleman with him who spoke a little English.  They were very nice and we chatted for a few minutes.  They had asked me to grab a drink, but I knew Dustin would be home soon and I probably should be that friendly to strangers, so I politely declined.  Maybe when my body guard, Sammy, is here, we can take up some of these offers! Haha

Dustin and I spent the rest of the afternoon bargain hunting and found some great finds for the apartment.    We just finished dinner and are going to find a pub to have a quick drink and get off these computers for a while!

It's off to Gens tomorrow to purchase some furniture and to visit the markets there!

We Have Home Goods!!!

So only 6 months later, our home goods have finally arrived!

We woke up this morning to a bunch of ruckus outside, only to find out that the big lift had arrived to deliver our home goods.  I was quite excited to finally have some utensils and other things to cook with.  The movers were Flemish, much nicer than the French Belgians.  They worked harder than any other movers I have ever seen!  Since the Christmas lights were still up down the streets, they could not use the lift and had to use a rope to pull the box spring up for the bed.  It was amazing how smoothly they did this!

Once they were done, I offered them sandwiches, but unlike the boys I know (cough, cough... Dustin... cough, cough)  they politely declined.  So far we have only found one item broken!  We tried to get rid of the cheap bookcase from Dustin's apartment, but the garbage men only take items in bags.  We left it on the curb, so hopefully Belgians are somewhat like New Orleaneans, and it will be gone in the morning.

Dustin had the day off so he could be here when the goods arrived!  Thank goodness because his motorcycle will not fit through the door and the battery was dead, so he had to walk it up hill to park it in one of the public garages.  After all the moving was done we did a little shopping!   I am so glad we found some different craft stores.  I have to get on Jen's DIY kick so our apartment looks half as nice as her house!

I found a couple great ideas and we also got a new fireplace!!!  We have been looking at the bioethanol fueled fireplaces for a while and really wanted an indoor/outdoor one to use here.  They are so expensive, but luckily we found a decently sized one.  The box had been opened to use as a display so it was marked down from 229 Euros to 171 Euros.  You know me: the deal was even more exciting than the fireplace!

I have some unpacking to do before bed but I'll definitely post pics once we have the fireplaces together!

Playing House

I learned one big lesson yesterday and today... I have much more adjusting to do than I had thought!  In the spirit of doing something new everyday, today, I took the first steps to making this apartment our home!


Last night Dustin took me to get groceries and cleaning supplies at the commissary on base.  This type of grocery shopping is definitely not what I am use to.  I was so thankful for the English labels, but the small selection of produce and meats as well as the expensive brands can be quite annoying.  I think I made Dustin crazy, spending about two hours looking for things that weren't there and comparing prices.  I am a thrifty girl at heart, so it killed me to buy the name brand of simple household items.

We then went to the Carrefour in the Grand Pres.  It's like the European Super Target and we were able to purchase a vacuum cleaner hangers, and of course a bottle of wine!  Dustin also treated me and bought me a combination blender/food processor, which I cannot wait to use!  He definitely knows the little things that make me happy!


All this shopping meant that today was a cleaning day.  I scrubbed every inch of this apartment to get rid of all the dust and spider webs.  I found some pretty nasty corners that I don't think were ever cleaned, but about six hours later we had a clean home!

By the time Dustin called on his way home, I was so relieved to have some company!  He did surprise me with a nice hair cut (he definitely needed it) and a beautiful bouquet of flowers.  Since we didn't have a vase, I tapped into my thrift side, made him eat the last of the pickles, and washed the jar to make a cute, makeshift vase!


It feels nice to have a start, getting settled into life here, but I did face the reality of how much I have to adjust to this quiet, more time at home thing.  It gets kind of lonely sometimes, but I am more motivated than ever to find some more "firsts" and other opportunities to fill my time.

Bonjour!

Today is the first day I am to fend for myself in Belgium!  Dustin woke me up on his way to work this morning to say goodbye.  It is a bit surreal...  I felt like it was every other morning that he use to wake me up before heading off to work, but once I woke up myself, I realized this was much different.  Here I am this little southern girl trapped in a big foreign world!


You might say the past few months have been a bit busy, but I would say they have been a whole lotta crazy!!!  Dustin came home to New Orleans to "celebrate Christmas, " which really involved running around like chickens with our heads cut off.  Finding time to pack, purchase all of my American essentials, and say goodbye to everyone.

We arrived in Brussels on December 29th and spent the day preparing for our New Years London Adventure.  Our plan was to take the bus with the SHAPE tour group to London the next morning, but of course we both overslept and missed the bus.  Which meant for a morning of frantically getting ready and looking up train tickets.  About an hour later we were in the Mons Train Station, right down the road from our apartment, boarding a train to Brussels.

There was some trouble with our tickets from Brussels to London, so as Dustin sorted everything out at the customer service desk, I took the opportunity to stop at the cafe and get a cappuccino.  I was quite excited to see Sam's Cafe... reminded me of our sweet little Sammy still at home.  Dustin met me there and we both chugged our cappuccinos and headed through customs to board the train.  We both fell asleep for a quick nap, waking up on London!

The station was beautiful especially knowing the relief of making it to London.  Upon first impression, I was in love with the city!  It reminds me of a classy, more beautiful New York City, and I was relieved to be in a country that spoke English!  Now don't get me wrong, I do love New York, but let's face it the Black Taxis are much nicer than the Yellow Cabs, the Underground is much cleaner than the Subway, and the famous local pubs are much more fun than pretentious night clubs.  I was in awe for the entire taxi ride from the train station as I compiled a long to-do list in my head.


Much to our surprise, we arrived just after the rest of the group.  Our rooms were not ready yet, so we left the hotel to grab a quick lunch with Dustin's co-worker, John, his wife, Amy, and their two boys, Austin and Seth.  We were on a mission to try fish and chips!  Let's just say a restaurant with Indian servers who speak little English, is not quite the best place to try the famous British dish!

After arriving back in our hotel, we freshened up and went out to see the Winter Wonderland in Hyde Park.  The walk was much longer than Dustin and I had anticipated and I was definitely not wearing the correct shoes.  So we made a few stops at some shops as well as the Victoria & Albert Museum.  The museum was absolutely amazing.  I took in as much as I could as we briskly walked all four floors to catch a quick glimpse at everything!  Then it was back in the cold rain to Hyde Park.  The Winter Wonderland was not as exciting as the Christmas Markets we had visited while I was in Europe for Thanksgiving, but a few glasses of mulled wine, hot spiced cider, and a freshly made crepe made it well worth our time.  We also purchased a bottle of honey liquor which I can't wait to try in a glass of hot tea.


The lady at the honey stand recommended we go down to Picadilly Circus, so of course we started walking that way.  It would have been much better if we had taken the Underground, but of course we had a bit of liquid lubrication and thought our feet could withstand the walk.  Sore feet and cold rain led to a grumpy couple!  I was not too impressed with Picadilly Circus as I prefer the more historic, less commercial sites.  It is simply a British Time Square, and once you see it there is really not much left to see!  By this time I definitely had to find somewhere to eat.  I knew if I was hungry, Dustin was on the verge of becoming hangy (so hungry he becomes angry)!  Somehow we ended up in China Town and the number of buffets were very unappealing.  About thirty minutes later Dustin had already hit his end and luckily we found a nice, neither over priced nor China-buffet, restaurant.  We sat at the bar and had some scotch and wine accompanied by grilled octopus & potato salad, salmon, and veal ravioli.

Our happy, full bellies and once again liquid lubricated bodies decided we would walk back to the hotel.   As if the blisters under my toes were not enough of a fore-warning!  We did some site seeing on the long walk back (our excuse for being lost!).  We walked down the Diana Princess of Wales Memorial Walk to the Victoria Memorial, around Buckingham Palace, to a few different pubs, back to the Victoria & Albert Museum, and finally (about an hour later) to the hotel!  My feet were so swollen, Dustin had to help me get my boots off!  We both elevated our feet for the night and were asleep before our heads hit the pillow!

The next morning we ate breakfast at the hotel restaurant and made a quick Starbucks run before boarding the Underground to Buckingham Palace for the Changing of the Guards.  The site was amazing, people filled the circle all hoping to get a glance of the ceremony.  Somehow Dustin and I were able to wiggle our way to the front gate of the palace for a fairly close view.  Dustin hoisted me on his shoulders so I could get pictures.  The music playing from the marching band was so entertaining and much more relaxed than I had anticipated.  By the end of the ceremony, we were able to shimmy our way to the gate to get some really close up pictures.  I also made Dustin wait to take a picture with one of the police men.  They are like celebrities to all of the tourists.  There was a large line of people waiting to get a quick pic with each of the police officers.  They are so kind and patient and the gentleman offered us some great advice for our New Years Eve celebrations to come later that night.

We then met up with John, Amy and the boys to make our way to Westminster.  We took the Underground to see Big Ben, which is absolutely a site.  As soon as you walk up the steps, Big Ben is right in front of you!  We spent some time enjoying the view of the Parliament Building, Thames River, and the London Eye, before venturing to Westminster.  The buildings and views were amazing.  I have to say Westminster Abbey was my absolute favorite!  We wanted to take a tour, but the boys were all hungry and I definitely have learned my lesson about making boys wait for food!

We walked back across Westminster bridge and ate at a nice Chinese restaurant next to the London Eye.  Our view for lunch was breathtaking and we were able to see them begin the set-up for the fireworks show later that night. I definitely enjoyed the European lunch, which always takes at least an hour and a half... the break was well needed.


After lunch we took the underground to the London Tower and the Tower Bridge.  All of the history was so interesting and once again everything was beautiful.  We left there quickly in order to make it to the London Bridge.  After a short Underground ride, we stopped in a small corner store to ask for directions to the bridge.  The store clerk chuckled and pointed to a small, plain, old bridge and said "there's the London Bridge!"  Supposedly, the bridge has been burnt down so many times that there is nothing impressing left to see about it.

Then it was off to the hotel for a quick nap and to get ready to count down to 2012.  We ate at the pub down the street so we could finally have some good fish and chips... and they were delish!  Amy and John then met up with us to go to the famous Prince of Whales Pub to celebrate.  The pub owner was so kind, greeting us at the door and wishing us a happy New Year.  We enjoyed beer, champagne, and Pimm's as well as some awesome American music (yes that is one thing we have better in the states!).  We tried to see the fireworks, but the buildings were blocking our view, so we opted for a television view!  It really was a nice night and it was wonderful getting to know John and Amy better.

We went back to Westminster the next day to catch part of the New Years Day Parade.  We were right where they film the parade for television.  I was so excited when the first person they talked to was from New Orleans!  After about three groups, we had enough of the parade and weighing the time we had left, we decided to skip riding the London Eye and take the Underground to Harrods for afternoon tea!


Harrods was absolutely breathtaking!  I was like a kid in a candy store!   I wanted to see everything but the large crowds and limited time led us to hurry up to the Georgian Restaurant.  We enjoyed some tea, a wonderful beet and goat beignet salad, squash salad, smoked salmon, and pistachio creme brulee!

We walked off the delicious meal throughout the store, trying to see as much as possible.  we found a large assortment of "Sammy Stuff" which I immediately fell in love with, of course, and I also purchased my cookbook souvenir.  The merchandise and displays in the store made it feel more like a museum.  It was the best of the best of absolutely everything you could think of!  I really hated to go, but we did have a bus to catch.

Once again we had to take the Underground to the other side of the city to get to the Sofitel Hotel, were the bus was to pick us up.  We made a quick stop to get Dustin's souvenir shot glass, and rushed to the hotel.  For some reason the bus was about twenty minutes late so we stopped in the St James Bar for one last Pimm's & Lemonade... Yummy!


Then it was onto the bus for a long ride back to Belgium.  I was able to talk to my dad and wish him a happy birthday, which made my day!  It was definitely a reality check as I realize I will not be able to be home for all of the special days like that one.  It is hard to be away from my family but their love and support are the only reason I am where I am today.

Our bus ride did include a unique experience on the chunnel.  The process of loading the bus into a sort of train car to be shot under the water, was a little scary to say the least.  We were able to get off the bus for a quick potty break and really experience this chunnel thing!  Everything was pretty wet and kind of gross but it was crazy to think about the technology and work that went into building this transportation!


The bus dropped us off at SHAPE and we took a cab back to to the apartment, were I once again battled with this time change thing!  I stayed up all night, so both Dustin and I slept until noon the next day.


Now I am waiting for Dustin to get off work so we can go to the base and buy some cleaning supplies.  You can definitely tell a bachelor has been living in this apartment for the past few months!  I am sure this will be an interesting experience to share with you tomorrow!


While it was exhausting our London trip was my first, once in a lifetime experience from this move.  It is still all new to me, and a bit overwhelming.  I feel so grateful to be here, yet so scared and homesick.  I can't wait for the new adventures and experiences each day brings and look forward to sharing it with you.


I know this will be a trying time for me as well as Dustin and I.  As if a tight budget, moving in together, and living in a foreign country aren't all challenges in themselves!  My hope is that I will continue to learn more about myself and to grow through my time here.  I could not do this without the love, support, and prayers of everyone back home.  I hope this leap of faith I am taking will motivate and inspire someone else to do the same, to experience life, and to challenge themselves to do something new!   Cheers to 2012, and all the adventures it promises to bring!!!
